Gavarnie are proud to grow and produce capers here in Australia, delivering to you a better-quality ingredient to improve your dishes. Capers are the unripened flower buds of the caper bush, harvested early in the day and preserved.
A delicious addition to salads, fish and many chicken dishes, Gavarnie Australian Capers are ready to eat straight out of the jar. Not bottled in large quantities of salt or vinegar, you don’t need to rinse our capers and wash away the flavour. We use just 5% salt-to-weight, which helps release the caper ‘mustard’ from the fruit, a natural juice acting as a powerful preservative.

Capers have been used in recorded history as far back as 1200 BCE. In Australia they are traditionally imported from Spain, Italy and Greece. Now you can enjoy their tangy lemon flavour from our own backyard.
Apart from their delicious flavour, capers are known for their tremendous health benefits, containing flavonoid compounds rutin and quercetin, two powerful antioxidants. Rutin helps to strengthen capillaries and prevent platelet clumping in blood vessels, while research suggests that quercetin has anti-bacterial, anti-carcinogenic, analgesic and anti-inflammatory properties.
